Born and raised in the heart of the Philippines, between Manila and Pampanga, Chef Daps embarked on a culinary odyssey that led them to the bustling cities of South Jersey and Philadelphia, following their family's immigration to the US in 1994. With a rich background spanning over twenty years in the restaurant, food service, and hospitality industries, Chef Daps’s passion for food was ignited in the vibrant streets of Metro Manila and further kindled by the cherished recipes passed down from generations.

Chef Daps's culinary philosophy is deeply rooted in the traditional flavors of Filipino street food and the treasured recipes of Lola, Tito, and Tita, infused with a touch of innovation gleaned from their solo food adventures and an insatiable curiosity about global cuisines. This unique blend of influences, from the local wet markets of Sampaloc Manila to the sophisticated kitchens of Italian and French fine dining establishments, has shaped their approach to creating dishes that are both nostalgic and refreshingly modern.

The turning point in Chef Daps’s career came with the launch of Patikim, a series of pop-up dining experiences in Philadelphia that celebrated the rich tapestry of Filipino cuisine. The pandemic period became a time of reflection and deepened focus on Filipino dishes, leading to collaborations with fellow Filipino chefs, menu development for Filipino gastropubs, and the successful initiation of a meal kit delivery service through Kampar Kitchen. Today, as a private chef for Lamisa events, Chef Daps continues to share their love for Filipino cuisine, aiming to connect diners with their Filipino heritage through meals that evoke comfort, joy, and a sense of belonging.
